A hearty soup suitable for lunch or dinner.
1 tbsp olive oil
1 onion, diced
3 celery stalks, diced
4 stock cubes (chicken or vegetable)
1kg split peas
½ tsp oregano
½ tsp garlic powder
1 small bay leaf
2 cups cooked leg ham, cubed or shredded
2 carrots, diced
Cracked pepper to taste
- Heat oil in a large saucepan and sauté onion and celery until soft.
- Add water, stock cubes, split peas, oregano, garlic powder, bay leaf and ham. Bring to the boil and then reduce to a simmer over a low heat for 90 minutes, stirring regularly.
- Once soup has thickened, remove bay leaf and add carrots. Simmer for another 30-60 minutes, or until carrots are tender. Season with pepper to taste.
